We did a B2B a couple years ago and we were very early off the ship and didn't get to the airport until almost 9:30. I would not book a flight out of SJU until at least 11, usually later. That airport can be a nightmare to fly home from with everyone from the ship going to get flights home. last year I stood in line for 1 1/2 hr to check my bags. The last time we sailed out of San Juan we didn't even start to depart off the ship until 7:30ish. There were problems with customs and there were custom agents on the ship at the room down the hall from us.:( I would looked for another package. We met up with some people at the airport who had a 10:00 am flight and missed it. It was a holiday weekend and they could not get a flight out until late Monday. Wait times a few years back when I was there were horrendous for ticket counter checkin, security and even a hot dog at the only snack bar on the concourse.
