For holders of US passports, & most other nationalities, both of these cruise lines - and other cruise lines too - will arrange your visas on board for port-of-call visits to both countries. No need for you to do anything in advance. The cost will be charged to your on-board account. Very very vague guesses - under $50 for Vietnam, around $15 for Cambodia. Guessing you have only one port-of-call to Cambodia (Sihanoukville), but your one Vietnam visa is good for all ports-of-call there. Makes no difference whether on cruise excursions or going ashore independently, though a cruise line may include visa charges in the price as bait to sell their excursions. My info is good only for port-of-call visits. For for flying in or out, or crossing borders, or even for internal flights (eg Ankor Wat) you need specific advice.
