if you book on line you pay then.

 

If you book on board you pay on board.

 

If you want to use shipboard credit you must be on the ship.

If you book online, you pay at that time. If you book on board, it goes onto your account.

 

If you have On Board Credit (OBC), there can be an advantage to booking onboard in that you can uses the OBC for payment. BUT you run the risk of a popular tour being fully booked by the time you get there.
