If you are asking about Majesty of the Seas, you cannot buy a drink plan on a daily basis. For Majesty, since the cruises are 3 or 4 days, it's all or nothing.

as general rule you must purchase for the entire time you are on board. depending on the line, you may be able to not buy it until 2 or 3 days in, but there must be X number of days left on the cruise.

 

you cannot just buy a 3 day plan and use it on 3 different days, they must be consecutive.

 

the only 'changing' you can do is if you buy the basic plan then decide you want to upgrade, you can pay the difference, prorated for what's left. if you opt to cancel it altogether, which again must be done early in the cruise, you will then be charged for each drink you have consumed up until then after the cost has been refunded to your account.

 

as general rule 5 drinks a day and most people will break even

Based on the OP's signature, they will be on RCI. Their policy is if purchased on board it must be purchased with at least 4 consecutive days including the last day left on the itinerary. As they indicate Majesty, clarea correctly pointed out that it would need to be purchased in advance or on day one for the entire cruise.
