It's possible, depending on the excursion. Also, they supposedly hold back some slots for onboard booking, so visit the excursion desk or check on your interactive TV (if your ship has that) as soon as you board. Look into private tours; you can probably do the same activity, but you'll be part of a smaller group and will have greater control over your day. I'm going to try them on my next cruise already booked an hotel all inclusive for a day with a bunch of others from my roll call board.
