Which tour are you taking? If you are just doing the round-trip summit tour, you just go up and back to town, with no lunch involved. If you are taking a train-bus combo tour into the Yukon, usually lunch is provided as part of the tour. Check with your tour operator.

I recommend that you take the bus up to Emerald lake and Caribou crossing, they have a nice BBQ chicken lunch at Caribou crossing. Then take the train back to Skagway from Fraser. We've done this a few times, makes for a nice day.

That is what we did last month, loved it. Makes for a full day but with a tasty BBQ lunch in the middle it's worth it. The doughnuts are lunch are really good. :D
