MDR Bottle of Wine Question

They did for us on our med. cruise. I would assume that this would work if you have classic dining in an MDR not sure how that would work on the Quantum class ships without MDRs.

Same way. They write your room number on it and put all the wine in a central place. You just tell them you have a bottle from the previous night and give them your name and they will get it.

We usually sail on Princess, where the wait staff will store what's left of our bottle of wine after dinner so we can continue with that bottle the next night. Does RCCL do the same thing?

Yes. And unlike Princess where you can only consume your personal wine inside the stateroom but charged with corkage when brought in the dining room, RCCL allows you to consume your 2 750ml bottle of wine in the dining room without corkage fee.
