Use of onboard credit to book specialty restaurants online prior to cruise?

I just booked Epic for Thanksgiving and the promotion included: beverage package, specialty restaurants X3, and $240 on board credit. When the online booking opens up will it let me use that onboard credit to pay for them?

No.

On board credit means just that. It's for use on board.

 

That said, some of the specialty restaurants do not require any payment at the time you book them, such as Cagney's, Le Bistro, and La Cucina.

Onboard credit can't be used to pay for things upfront. It is only applied to your account once you are onboard.

 

However, if you have the dining package then you won't be charged anything for the first three meals you book, as the system will assume that you will be using the dining package for them. That won't use any of your on board credit though. You will have to spend that on something else.
