I thought it was one of those gins that change color when you add the tonic [which I also haven't tried] until I read the post more carefully.

Those are really good! We have a (partly empty) bottle of Empress 1908 in our fridge. The color change comes from butterfly pea blossoms. I assume that the color is pH dependent so the acidity of the tonic changes the color. Anyone remember phenolphthalein from chemistry class? Similar chemistry but much tastier.

 

I haven't tried blue wine yet.

Well, the Mattress store called and there is another delay........hoping it gets delivered 

next week but will just have to wait and see.
