Yes, the real trick is to recognize the opportunity BEFORE you put your foot in it!  😅 Timing is everything!  You would think I would learn from my mistakes!

If you need a pre boarding test in Barcelona this is the place to use -
www.teletest.es
But book through fittofly@analyticaltest.org.
Great service. You can get them to come to your hotel which we did. Booked time for 0830-0900.
Nurse in the room at 0831. Test done and waited the 15 minutes and immediately you get a certificate with QR code.
Rojaan wanted a printout so she went down to the concierge with the nurse and that was done straight away.
Even better the tests were negative,

Hmmm… there’s RachelG who is a doctor from Oklahoma whose husband is a lawyer and gentleman rancher. Could it be George you’re thinking of?

Oklahoma steak is way better than Kansas steak.  Lol.  Nicer grass here.

Got a pair of yummy Berkshire Heritage pork chops on Saturday. Decided to try a new recipe with them tonight.

Chops grilled for a few minutes then finished off to the side of the grill with indirect heat.

Served with blueberry sauce! An unusual combination. Sauté shallots with fresh thyme. Add red wine and reduce. Add lots of blueberries along with a chipotle pepper and adobo sauce, and cook until they pop. Finish with a bit of balsamic vinegar, off the heat.

Chops and sauce were served with farro and a garnish of fresh thyme. The sauce had a bit of kick. It went well with a zinfandel from Sonoma. And it looked nice on our new plates too.
