We did an amazing tour with "Tours By Locals" last May. Kinsale (was included) was nice but it took a bit of time to get back...I would opt to bypass it next time.

If your sole objective is to get to Kinsale, and you don't care about touring Cork, the cheapest and relatively simple way is to take a train from Cobh to Cork and catch the bus from there to Kinsale.  My admittedly brief search is showing about $80 one way for a taxi from Cobh to Kinsale, and less than $20 for a train/bus combo.

The Cobh railway station is next door to the ship.  In fact it is closer than the excursions buses can get.  I think this set up is due to the historical emigration etc.  One of the best sites for working out local transport worldwide options is:  https://www.rome2rio.com/map/Cork/Kinsale

 

I have found information is good from a recent trip in Scotland where the intricate details they supply were identical to reality found later on the cruise.
