New Years Day Peas

On our last cruise out of Galveston, I got chatty with the head chef in the windjammer and he made breakfast tacos a few days later - and it was a big hit with Texan guests.

If they have it on the ship, they will try to accomodate you especially if they think it will be popular with other diners. I always make friends with the chefs!

Roast pork and kraut served on mashed potatoes is our tradition ever year also.  It must be a Midwest thing, we are from Ohio.  Brings luck to the new year.

In Mississippi we use dried black eye peas.  Soak a few hours and then cook with ham hock, bay leaf, garlic clove, onion and of course salt/pepper.  I do like fresh collards but they do take a long time to get tender.   Tradition in the rural areas says use pig tails in the greens.  Of course corn bread--I usually make Mexican which has cream corn, jalapeños and cheddar cheese.

Where in Mississippi are you?  We have a house in Tupelo and have good friends there and in Eggville.

Update for any interested.  
 

I spoke with the section head waiter who brought main dining room chef over to speak with me. I tipped them both and he was able to fix an appropriate family style sides that they added to or normal New Years Day dinner.  He even prepared a second helping of peas without pork using curry. (He was of Indian heritage). Delicious. I tipped them both.
