Does anyone know when Princess will put excursions online their website for a cruise taking place in January 2022?  Thanks in advance for your help.

I was wondering the same thing for my December 2020 SE Asia cruise. Interesting that my August 2021 Mediterranean cruise has a full set of excursions for every port. I'm guessing they are trying to figure out what excursions will look like in the short-term. Hopefully, it doesn't mean that they plan to cancel the cruise.

Princess does not say that excursions will be available this far in advance. Usually they are available between 100-150 days before the cruise. If they sign contracts earlier than that, then they will be posted more that 150 days in advance.

With 18 months to go before your cruise, it will be a while before excursions are available.

Some destinations/ports will have excursions bookable shortly after the cruise goes on sale (very common for Europe and Alaska where they often have multi year exclusive contracts with tour operators), other destinations see them open up at random with the bulk bookable at least within six months prior to sailing. In rare circumstances (like this year) they may delay excursion booking for certain sailings. Keep watching as they can show up at any time without notice.

We've rarely taken Princess excursions as our CC group usually organizes private excursions in advance.  Usually only 8-12 pax on them so it's a much nicer experience than a ship's excursion.  Course we did do the latter until we "discovered" Cruise Critic before out first TA.  This isn't usually the case in the Caribbean, though.  I like to snorkel so that's usually the kind of thing I do in the Carib. on a ship excursion.  When we cruise to European ports, I/we sometimes walk on on our owwn if that's doable or use the HOHO bus if that's possible, otherwise I'll go an excursion arranged by a CC member.  My DH generally prefers to stay onboard, though.
