Would the cruise line involved be important info? Have you looked at the excursions your cruise line offers?

The tours through the cruise line visit the perfume factory as does Viator.

A private excursion will take you, or not, where you want.  They provide suggested itineraries, but will always delete or add sites that interest you.  Put together your own small group.  The price always ends up being the same or less than the ship's offerings.

You also could go to Eze via a taxi, bus or a rental car.  There is little need for a tour or tour guide at Eze since the village is very compact and can only be explored on foot.   We have often enjoyed visiting Eze (it has a very convenient parking lot right in front of the main entrance) and it is an enjoyable place for shopping/browsing and having lunch.

I should also mention that some folks enjoy taking the bus or train to Eze/Bord sur Mer and then hiking up the trail to Eze Village.  For some folks it is a lot easier to use a taxi to Eze Village and perhaps hike down to the train station since that is all downhill :).
