That might be dependent on the location.  At my closest airport now, nothing food related would be open that early, we've stopped at a gas station to grab a breakfast sandwich before knowing that.   The airport that I grew up near I had a delayed flight that got in around 2am once, nothing was open other than baggage claim, you couldn't find an employee if you tried.

It seems like they’re still on breakfast. It’s all self service except for an omelet station.

I’m guessing this is where the buffet is. The beach grill and pool bar at this one are closed which was a surprise.
