Been a while since i cruise. So what do I need to have ready when check in starts?

Passport and credit card.

The ability to upload that may not be available when check in first opens 45 days out.

You will also want to upload a security photo.  Granted, they may still take one when you get to the port.

Has anyone going through San Pedro gotten through with just a photo of the vaccine card?

BTW, if you're looking for an early arrival time, you can skip the other things and just pick your arrival time; it will save whatever information you've put in.  Sometimes this is handy if you've got to get started on check-in at an early (or late) hour.
