Vancouver to Hawaiian Islands return mid October.

Did this cruise years ago - departed Oct.  First 2 days were cool.  Day 3 was noticeably warmer, with some people starting to lay out in beach loungers under the sun in bathing suits, though it could still be cool if there was any wind.  Day 4 was full on warm and only got warmer from there.  In Hawaii, it was perfect beach weather.  You are sailing the pacific though, so rougher seas and rain is always a possibility.  We had a few of those days mixed in.

Same as leaving from San Pedro or SF.

I have done this cruise twice. Agree that it warms up day 3, but both cruises were also very rough for the first two days. One was so bad that a number of people chose to fly home rather than take the ship back to Vancouver.
