I suspect that a US or Canadian  bank would not have any Scottish currency in stock only English to give you prior to travelling.

Affirmative, I haven't found a Canadian bank/credit union that will accept notes from any of the Scottish banks that issue them, only Bank of England.

Usually the ship docks in the center of town (Bryggen), so no need for a shuttle.  Bergen is a small city - you can walk to almost any place you might want to go.

And if the ship does not dock at its normal pier, Skolten, -- which does happen occasionally  -- they will put on shuttle buses.
