There is a car rental near the port, and you could do a one-way rental and drop it off at MCO. Then you'd have all day to explore on your own. Go to Kennedy Space Center! It's open 9-5, so would be a great way to kill the entire day. That is pretty much all Disney is anymore. If that is your thing then go for it.
