Does FTTF still let you arrive whenever you'd like instead of a set boarding time?

You never could set a boarding time.

Yes. You still select an ARRIVAL time, but you can ignore it and show up early. The same as pre-covid.

I grabbed the elusive FTTF on my November adventure and the earliest time I saw was 8am

I just had FTTF on my Freedom cruise. My arrival time was 10:30-11:00. They started boarding about 11 am, so with FTTF you were called to board after the Platinum/Diamond. The way they called was Weddings (if any), Platinum/Diamond, FTTF, then suites.
