Leaving next week...at the time I booked, my husband needed a handicapped cabin to accommodate a scooter.  Since booking, now he only needs a walker.  Will we be moved to another type of cabin when we board?

No.  You will find the accessible shower much safer for him.

I agree with the others that you will still need some of the features of a handicap cabin. However, if you are feeling bad about taking one, there is the option of an ambulatory accessible cabin. Those have grab bars in the bathroom and a fold down seat in the shower, but they don’t provide the wider doorways, and there is still a lip at the bathroom door. If there’s any risk of tripping, I’d consider staying put. We will be in an ambulatory accessible cabin in May, I’ll have a review after.

I booked last minute and they gave me a handicap cabin.

I’d stay put.

I think if your husband is using a walker then those wide doorways with the doors which remain propped open will work great for him.

Plus you don’t have to step up into the bathroom.
