Check this out - https://www.flightsfrom.com/.  I just found it.  It makes it very easy to find nonstop flights that go out of any airport.  You can get a whole lot of info really quickly with this site. 

 

They also have a flightroutes.com that shows flight that are not non-stop.  It took me about 10 seconds to find available flight with all sorts of details from Las Vegas to Tokyo.

For the first task, Wikipedia is truly excellent, although you then have to go elsewhere for detailed information on schedules.

 

For the second, it is still hard to beat matrix.itasoftware.com (or oldmatrix.itasoftware.com for those who prefer that interface).

Don't get all excited about this.  It lists some easy to find routings, but misses a number of other possibilities.  Among those (to use your own example) are flying LAS-TYO via Mexico City on Aeromexico or ANA, or even the simple AA combination through Dallas.
