Yes, they don't have a way to scan them from your Apple wallet onboard. The QR codes and such are completely useless to them. They manually enter the card numbers into their system and then have you sign the paper copy, so you need a paper copy and for them to print it at guest services is a HUGE pain in the a**. They need you to forward the email to the guest services rep, they have to print the email from one computer and then take the print out over to another computer to enter the codes.

You should *ALWAYS* take a printed copy with you if you plan on trying to redeem it/them at guest services.  They will require a printed copy for them to keep. Personally, I would play it safe and take 2 copies along so that I have "proof" after the fact that I *had* a gift card to use.
