PG_Cruiser Posted August 26, 2023 Author #156 Share Posted August 26, 2023 PINK GRAPEFRUIT SPARKLE Chops Grille Substitution: Absolut Grapefruit Vodka for Belvedere This is Royal's photo of this cocktail in their recipe guide. PG_Cruiser Posted August 27, 2023 Author #157 Share Posted August 27, 2023 LAVENDER VODKA MARTINI Chops Grille This drink has a cousin in the Schooner Bar menu - the Lavender Daiquiri - which has rum and lemon juice, while the Martini has vodka and lime juice. They're often confused with each other.
PG_Cruiser Posted August 28, 2023 Author #158 Share Posted August 28, 2023 (edited) SPARKLING ROSEMARY LEMONADE Chops Grille Homemade Sugar Free Rosemary Syrup Another color mystery... this is Royal's photo of this cocktail. Where did it get the pink color? I'm thinking they might have meant "rose syrup" instead of rosemary. Speaking of rosemary, I did not like the flavor that it imparted to this cocktail. Maybe it was meant for pairing with the steak at Chops. I wouldn't have it by itself. Edited August 28, 2023 by PG_Cruiser

Other websites, not connected with Royal, also have Cointreau or Triple Sec in their recipes. For some reason, Royal skipped this ingredient in their official recipe. You might want to ask the Royal bartender to add it to your drink.

I prepare a batch of the "Passion Fruit Guava Base" for cocktails. I really didn't have to measure out 3/8 ounces for this. But to get to the 1 1/2 oz measure for this recipe, I had to put in the 3/8 oz. 3/8 is about a 3/4 of a tablespoon (2.25 teaspoons). To make it simpler, just add half an ounce of each ingredient. 2 teaspoons of each will also work. I love Math, but not in the kitchen, so I have a lot of odd-sized measuring spoons. lol Edited August 31, 2023 by PG_Cruiser

I probably need to get some odd size measuring spoons. I'll try it using 1/2oz for everything except the rye. I like to make Tiki cocktails and the measuring has to be exact in order for it to taste right. Edited August 31, 2023 by Sea Dog

I found that getting all the different syrups can add up fast too. You've got a good list. THe SMith & Cross is a must have for Tiki cocktails. It's got this great Jamaican funk to it that makes a cocktail complex. On Bamboo's menu it looks like they use some good ones. I think instead of the Bacardi Superior I would rather they use Bacardi 8. Most of the Bacardi rums aren't very good and most Tiki bartenders only use Bacardi 8. I recommend getting Plantation Rum. I have the 3 Star (light) Plantation 5 Year (aged) Plantation Dark (dark) Plantation OFTD (overproof)

That's why I make my own syrups. I can make them in small batches. I make sugar-free version. With this project of mine, I'd have so many bottles of Monin in my pantry if I bought all the syrups in the recipes.
Rare Sea Dog Posted August 31, 2023 #174 Share Posted August 31, 2023 Making your own syrups is the way to go. I only have made simple syrup and rock candy syrup plus some cinnamon syrup so far. Some day I would like to tackle a Orgeat but I use Liber & Company's Orgeat which is fantastic. I have a lot of the Monin syrups which I like.
