Are the specialty restaurants open on Christmas?

Yes.

They are open but generally with their standard menu. The festive menu in compass rose two years ago prompted us to cancel our reservation in chartreuse in favor of roast goose with chestnut stuffing and the trimmings. It was a memorable meal, toasted with a glass or two of wine, shared with our new friends that we call friends to this day @Mudhen @loriva

Well, we would definitely cancel for roast goose. Not so much for turkey, which was on a Christmas menu I saw recently.

On our Christmas cruise last year we were able to order the Christmas Special meal in the specialty restaurants if we wished. They just needed a "heads up" ahead of seating.
