We're ending a cruise in January 2025 on NCL Prima (Haven) with a docked time of 7.00am in New York. Our international return flight to the UK is for 6.30pm from T8. Does anyone have any experience of what time we are likely to be off loaded from the ship for transfer as we may need to allow for a day room somewhere near the airport?

You'd be lucky to find a Manhattan hotel that will let you check in early - check in time is usually 3pm or 4pm - you might be able to find a Manhattan hotel that will offer a day room, but that won't be cheap.

IMO your most realistic option is to get a day room at the TWA hotel at JFK.

It is not cheap either but will save you endless aggravation and give you a room to drop your luggage and rest before your overnight flight. The adjacent JFK air train is pretty good for getting you to your departure terminal.

You can probably purchase a transfer to JFK with NCL when on board, could be cheaper than a taxi, it's a long way from the west side of Manhattan to JFK.

Other JFK 'airport' hotels are much further away and are a pain to get to and from and are, indeed, pretty bleak.

Pre-booked car services may be the answer.  For example, the Dial7 rate for a sedan to JFK is $69 plus tolls.  A minivan is $97.  For two people, that likely beats what a cruiseline would charge.  For example, a recent cruise charged $70 per person for a 3 mile ride to the airport (not NCL nor to JFK)

and yet the NCL cruise I was just on had transfers for $70 total (if even that much, it might have been as low as $25 per person) for two to get from San Pedro cruise terminal to LAX.  Prices vary considerably from port to port.

And cruiseline to cruiseline.

The cruise line might also offer an excursion + transfer option (I know Cunard does this after TAs) - you disembark, get on board a coach with your luggage underneath, have your excursion, and arrive at the airport at a more reasonable time.
