  1. What is the name of the Bajan restaurant? We will be there in February and would love to eat where the locals do! Any other suggestions for our day in port?
  2. Fogo de Chao is a chain with over 50restaurants in the US including one in Baltimore . (They are planning to expand to Canada.) The Churrasco Experience $63 is a meat lovers dream, a variety of meat keeps coming to your table until you tell them to stop. My 25 year old nephew gets his moneys worth. I order the Market Table $35 which is fancy sides, salads and charcuterie. I’m not a fan of getting up to serve myself. It is not a favorite of mine, more quantity than quality however, many people love it, particularly if you have a large group.
  3. Maybe I’m remembering wrong but I thought there used to be a card on the room service tray that said call xxx to have the tray removed. I think it would be difficult for a wheelchair to maneuver down the hall if trays were left there. Also, I had china coffee cups with my room service in November. I do not drink hot beverages from paper cups. I’ve heard the micro plastics degrade from the heat and it is bad to consume them; plus, they cannot be recycled. @kazuHope you have a smooth turn around day, a fun visit with you San Diego friend and a good time at the Meet & Greet!

  5. I have to admit that I was not familiar with Pepperpot so I Googled it. I found this information on Serious Eats. It is a national dish of Guyana, a meat-based stew, rich with braised beef and infused with cinnamon, clove, thyme, and wiri wiri peppers. Pepperpot is traditionally eaten on Christmas morning for breakfast. Pepperpot is defined in large part by the inclusion of cassareep, a thick, black liquid (the reason pepperpot stew is dark) that has the same consistency as molasses and is made from the bitter juices of the cassava. The process of making cassareep involves grating the poisonous and bitter cassava root. All the juices of the grated cassava are squeezed out and then carefully boiled, to both deactivate the poison and reduce the juices to a thick black syrup. You can buy cassareep online. Beef, pork, mutton, oxtail or tripe are some of the more popular meats for making pepperpot. The recipe in Serious Eats suggested using cow foot (collagen-rich cuts like cow foot, head, and heel are popular inclusions, as they enrich and thicken the stew's consistency as their natural high levels of collagen melt into gelatin). Pepperpot is popular in other Caribbean countries such as Antigua and Trinidad and Tobago. However, Guyanese pepperpot should not be compared with any other pepperpot from different parts of the Caribbean, as it differs in appearance and preparation.   10. If you are using your phone to take pictures, it is very easy to post them. Click “Add Files” Tap “Photo Library” Tap the photo you want to add. You will see a blue check mark by the photo you selected. Then tap “Add” I use an iPhone and can select more than one picture at a time. Hope this helps.
  11. Thank you to all who post on the Fleet Report and Daily. The two ships in the Eastern Hemisphere and some recent port pictures of the destination of the day have me thinking about a cruise to Australia and New Zealand. I’ve been poking around CC and found this excellent live thread, I believe it gives a unique perspective of the current Westerdam cruise.

  14. I made many layered drinks while tending bar…here are a few hints. The drink will taste better if you refrigerate the alcohol. The heaviest alcohol, Kahlua, goes on the bottom. Next, pour the Baileys slowly over a convex( upside dow) teaspoon. Finally, the Grand Marnier, slowly over the teaspoon, trickle down the side of the glass if necessary. This is a delicious drink but will rock your world if you have more than one!

  21. Both sets of my grandparents were PA Dutch. Thank you for reminding me of a delicious cookie they used to make. Here is my grandmother’s recipe. PFEFFERNUSSE 3 eggs ½ lb. powdered sugar 2 cups flour ½ tsp. cinnamon ¼ tsp. cloves ¼ tsp. nutmeg ½ tsp. soda ¼ tsp. salt 1 lemon, juice and rind Beat eggs well, gradually add powdered sugar, lemon juice and grated rind. Sift flour and add salt, soda and spices. Sift again and add to egg and sugar mixture. Beat to form smooth, medium-soft dough. Chill in refrigerator for several hours. Roll out on floured board, into long finger-shaped sticks. Cut into small marble sized pieces and bake on greased baking sheets in hot oven (425-f) until they turn a light, golden brown.
