Have not made this trip myself, but there is a train station right at Schiphol. You could determine schedules/fares from the NS website. Travel times are as short as 27 minutes to Rotterdam Centraal. Train from AMS/Schiphol Airport to Rotterdam CS (Centraal Station); then grab a taxi for the last couple of km from the station to the dock. Also you need a cab to get from the station to the cruiseterminal.
