Chocolate Meringue Cookies 3 egg whites l small pkg chocolate bits 3/4 c. sugar 1/3 c. crumbled saltine crackers 1/2 tsp. vanilla Melt chocolate bits and cool. Beat egg whites stiff. Add sugar gradually and beat until stiff and glossy. Fold in crackers, chocolate and vanilla. Drop by spoonfuls onto ungreased cookie sheet. Bake 350* for 15 minutes. A few months later, we were on the same ship, but in the Caribbean; no meringues! DH asked for them and the next day they suddenly appeared! I think we also had them on the Ryndam, but not the Prisendam; I don't remember any with chocolate chips, which would be particularly yummy:D. I'm thinking for Valentine's Day to make some of these with a dash of red food coloring and shaping them into hearts. Other than a bit of sugar (3/4 cup) they are not heavy laden with all the not so good stuff. I will be trying the chocolate chip variety and hoping that the chips would not melt completely. This reminds me of so many recipe reviews I read online- "Didn't have chicken so used beef, didn't have rosemary so used dill, didn't have wine so used chicken stock,....... I agree chocolate chips, whole and unmelted, might be tasty in a meringue cookie but it would then be a different cookie.
