I know it's a $45 supplement, but that doesn't tell you much. It could be a great deal - or not - depending on portion size. I'd consider a half once a great deal, BTW. (This is just an alternative spelling.) The 3 main varieties are Beluga, Osetra, and Sevruga. This is order of most to least expensive. There's also Sterlet, but you don't see that as much. Good to know. :) I have seen some farmed Ossetras go for as cheap as $50 or so per ounce, and they're alright. The golden ones sell for higher. The particular one I had a few months ago cost a bit more than $200, I think, for the one ounce. But I have seen them sold for more and less... Seabourn served us the farmed kind. Lumiere has sadly closed, :( but they had the coolest caviar presentation I've ever seen. The only thing worse than an unimpressive caviar service is no caviar at all. We started using Evernote Food a couple of years ago, but realized that we were starting to turn into "those people" who let their hot food get cold and their cold food get hot while waiting for just the right photo. ;) You know you have a problem when no one is allowed to eat until "you try one more shot, without the flash this time." It's to keep people from distracting other diners with flash photography, and to make sure that you get a professionally photographed version of their dishes. At $45 for a 1-ounce serving, it is very inexpensive and doubtful to be of high quality. Most likely farmed from California, especially as HAL prides itself on using only sustainable seafood.
