Go to the top of the tower to the observation platform, and you can see the entire port area and watch the ships pull out. From there, you can even walk over the drawbridge to see the ships, or grab something to eat. We really love the Hyatt and stay there every time! I believe it is somewhere around $7 a day to leave your car there. To the OP, Embassy Suites is across the street from a large shopping area and within walking distance of many restaurants. It is a very nice hotel with a breakfast that is included in the price.
