I think this is called 'Bohemian' style preparation. I would agree though that this is an acquired taste and more or less equivalent to the 'Flaming Homer'. A few years ago we were in New Orleans for Jazz Fest with some friends. We went to a bar in the quarter that I think was actually named "Absinthe." There was a flaming sugar cube resting over the center of the glass, and it was poured over the sugar cube.
