I think the bars by Horizon Court are open disembarkation morning and you can go get a drink there. We've not done it the last few cruises just because we drove home from port, but if I was flying out of FLL then I would certainly get a Bloody Mary (or 2) that morning!! But beware that the lines in the IC are usually VERY long due to the compression of folks all around the same time and those trying to use up last punches on coffee cards!
