We usually do this or stay at the Hilton Marina. The Hilton Marina is just the other side of the 17th St bridge from the port. Higher floors facing the bridge have a view of the ships. A quick stroll down to the marina area and toward the bridge also gives you a "seal level" view of the ships. I think you can also see the port from the higher floors of the Hyatt Place. Woke up in the morning of our departure, looked out the window at our ship (sailing on Princess that time). Kind of pricey but IMHO, worth it to do once...
