I am going on sky princess from UK to canary islands in October I have an interior cabin does this have air con inside or should I take a USA can with me ?

Air con as in air conditioning? It's 2022. All modern facilities have air conditioning.

Just to be clear all staterooms are fully air conditioned, air exchanged, and temperature controlled.  Unless you want to add more circulation to the air in the room, there is no need to bring a fan.
