As the ship is likely to be a distance out to sea and it's unlikely it will be hugging the coastline I'd be very surprised if you would see the Pitons even if approaching from the south. As Gettingwarmer says, an excursion is the way to go. Cosol Tours has some great reviews as many on here would confirm if you want a private tour company. If you're heading north on your sailing - nope, you won't see them, particularly as you'd be passing early morning. If you're heading south or to Barbados after - most ships often sail down the west coast, near enough to see them from a distance. Not a great view - but it's there.
