How do most folks travel back to NYC, Baltimore or Boston?

We took the Amtrak "Adirondack" train back to NYC.  It was very scenic and we really enjoyed it.

The Adirondack ran between Montreal and NY City, so the OP would still have to get from Quebec City to Montreal.

I intentionally used the past tense "ran" in the above sentence because Amtrak hasn't offered the cross border service between NY and Montreal since the start of the pandemic . They recently resumed service using the name "Adirondack" but the train for now only runs between NY City and Albany.

For the relatively short trip between Québec and Montréal there are several trains daily, operated by Via Rail Canada, and several buses daily, operated by Orléans Express. However, the arrival and departure times of the Adirondack in Montréal can sometimes make it challenging to arrange a same-day connection there, and an overnight stay in Montréal would likely be required.

 

There are buses from Montréal to New York, operated by both Greyhound Lines and Adirondack Trailways, that could be used with a same-day connection in Montréal, though the length of the journey might discourage some from utilizing this option.

Easiest and quickest way is to fly from Quebec City. Several nonstops are offered each day to the New York airports on Delta, Air Canada, American, and United. Tons of options and if booked in advance can be as low as about $150 per person.

 

American runs three a day to Philadelphia nonstop. There aren't any nonstops to BWI but there are 3 a day to Reagan National in DC on Air Canada. Also three a day to Boston Logan also on Air Canada. These airports with more limited options the prices can be higher than NYC airports. 

 

I too loved the train when it used to run from Montreal to New York Penn. Taking a bus would be tedious on this long of a distance and even if it was half off what the plane was it wouldn't be worth it (to me a least).
