  1. Good morning, everyone. Busy day planned for today. I need to get as much packed as I can, including the lamps, linens, and clothing. The new owners are coming by today at 1:00 for a walk through. I'm hoping I can give away more stuff to them. Friends Tom and Tim are coming at 2:15 to help me get two worn out pieces to the curb for pickup tomorrow. I did call and get some reinforcements to help with the packing on Thursday afternoon. It seems like it is never ending. Today's meal sounds great to me. I love acorn squash and could tailor the stuffing to my tastes easily. This is a great dish for your vegetarian/vegan family members. You can use it as a main course or as a side dish. https://wearenotmartha.com/quinoa-stuffed-acorn-squash/ This one is a little different with pecans and orange infused quinoa. It uses a goat cheese drizzle or you can use a cream feta. Or even sour cream. https://www.ambitiouskitchen.com/cranberry-pecan-quinoa-stuffed-acorn-squash/ Here we have one with a Mediterranean based filling. It may be too healthy for some. https://www.acedarspoon.com/mediterranean-stuffed-acorn-squash/ This Vegetarian Stuffed Acorn Squash recipe inspired by Canadian First Nation’s Cuisine is the perfect healthy and meatless main course for your Thanksgiving table. https://cinnamonandcoriander.com/en/wild-rice-stuffed-acorn-squash-with-feta-cranberries-pecans/?cookie-state-change=1667388056976 I know mine would never look that good coming out of the oven. But, I can hope! Wishing everyone a wonderful day!
  2. Good evening, everyone. I tried checking in earlier as I wanted updates on @Quartzsite Cruiser Lenda's DH, @smitty34877 Terry's DH, @kazu Jacqui's foot, etc. Finally I have been able to log in. @JazzyV Vanessa, we load the truck here in Ohio on Friday and drive to Midland. Then, we unload in Midland on Saturday. And when the truck leaves, I am moved in! Ok, back to packing!
  3. Rabbit, rabbit, white rabbit! Good morning, everyone, and welcome November! It is going to be a cloudy day here in northeast Ohio. Warm and sunny up in my new Michigan home. So far it looks like decent weather for both places on moving day. Could we be so lucky? I'm meeting friends for breakfast and then it is pack, pack, pack! Busy days for the next few. I can unpack at leisure. Today's meal is a variation on a classic. Instead of using red wine, we use rose. It gives it a lighter color and a different flavor. But, we are assured it is still decadent and you will want some good crusty bread to soak up the sauce. https://www.howsweeteats.com/2020/11/rose-coq-au-vin/ Doesn't that look delicious? This next one has different seasonings and accompaniments. https://www.thethirstykitchen.com/recipes/coq-au-vin-rose A lot of us got into cooking more elaborate dishes during quarantine because we had the time. For us retirees it can be a great hobby. And this dish fits the season well as it can become almost a stew and can really warm you up on a cold fall or winter night. https://thedeliciouslife.com/coq-au-vin-rose-recipe/ Finally, I am offering the original as a comparison or for those who prefer the red wine sauce. https://www.recipetineats.com/coq-au-vin/ That would be hard to resist! Wishing you all a wonderful day!
  4. Wonderful news! Have an absolutely fantastic time! Thank you, Lenda. My sister is almost over it. Her husband is in the middle of it. Mostly it was a runny nose, congestion, a sore throat and fatigue.
  5. Two out of three times they were trying to give me more money than I had coming to me. They go both ways. Once they refunded me for dinners in the Pinnacle that I hadn't used. Trouble is, I never booked them nor paid for them. Another time they charged me too little for the Crew Appreciation. This last cruise they tried to refund me for an excursion that I hadn't cancelled (nor had they). They thought I had the money coming because of the HIA excursion allowance, but I explained I had used all of that and had nothing coming back.
  6. I haven't had a correct statement since cruising resumed. More problems with the last statement than the others. Going to the front desk didn't really help. One was incorrectly charged excursions and I had to go to Shore Excursions to get that fixed. Another was a problem with a charge at the Pinnacle Grill. I had to go to the Pinnacle Grill to get that fixed. They were amazed that I wanted to use my prepaid dinner instead of paying for it again. I think they need to start over with the accounting department.
  7. We were in 3418 on the Rotterdam a few years back. It was very quiet with no noise from the dining room. The carpet helps and the time people are in there is limited. I'd stay there again. We have 3416 booked for July/August 2023 because of our experience on the old Rotterdam. And, you are steps from the promenade deck.
  8. We closed this morning and got the keys and garage door remote. We then went over to the house with our realtor and checked things out. Our realtor is having the carpets cleaned on Wednesday. Closing went very well. We were done in 20 minutes with no glitches. Cash sales are the best. Thank you, Lenda! We are so excited! It was a problem with the hotel wifi. We ended up there because my sister who lives in town has Covid right now. The wifi came on and off like a flickering light. Oh, my gosh, Jacqui! No, no, no. Do not jump off the balcony. That is way too messy. If you brought a swim suit, use the pool. That helps tremendously. I did something similar with a step years ago in Paris on the way to pick up a sister at the airport. We were starting on our Sound of Music tour. The first day I could not put any weight on it. It was pretty bad the whole time I was there, but the last day we had a pool and I went in. It didn't hurt in the pool and it actually helped it. Hope you heal quickly! @marshhawk Thank you so much for posting a recipe for today's meal. That is one of the recipes I had picked out!
  9. Sorry, but WiFi isn’t working this am, so no meal of the day. Hopefully tomorrow.
  10. Good evening, everyone. Just a quick check in as the wifi here is almost as good as the ship wifi. It kicks me off every 5-10 minutes and I have to reconnect. We had great fun yesterday making purchases for our home. We bought a dining set and then found a too good to pass up deal on a sectional for the family room. The whole sectional was less than the price of each individual piece of other sectionals. Of course, we were shopping in the Close Out Corner of the store. We also bought a TV table for the family room that has a nice electric fireplace in it. Finally, Sue found some glittery rugs that she liked, so she got those for the dining room. They will go nicely with the glitter chandeliers we have. The lights near the elevators on the NS remind me of our new kitchen and dining room lights. @smitty34877 Keeping your family in my thoughts. @Quartzsite Cruiser Slow and steady wins the race. Measure the progress weekly rather than daily. My best wishes to you and Steve. @ger_77I do hope you get those flights straightened out! What a mess. You earned the rant and we are all ranting with you! @Vict0riann I am so sorry to hear of Vickie's passing. Warm thoughts for you and her family. I'll try to post recipes tomorrow!
  11. Good morning, everyone. The notary public should be arriving soon to sign the closing papers on my house in Ohio and then I take off for Michigan to sign the closing papers on the house up there. It is such an exciting time! The only thing that can go wrong at this point is if the money isn't wired in time for closing on Monday. Fingers and toes are crossed. Today's meal will probably not appeal to all. I know I would take a pass on it. Maguro nigiri sushi is a traditional Japanese type of nigiri sushi. It consists of hand-pressed sushi rice that's topped with slices of tuna. Different cuts of tuna are classified as otoro (fatty), chutoro (medium-fatty), and akami (red meat). The dish has a mild flavor and a rich texture that makes it great for sushi newcomers. Traditionally, this type of sushi is eaten by hand in a single bite. It's usually accompanied by soy sauce, wasabi, or pickled ginger (gari) on the side. Here are step by step instructions for those who want to try to prepare this at home. https://www.cozymeal.com/recipes/r/tuna-nigiri Tuna Nigiri is made with sashimi-grade tuna and vinegared sushi rice – so much easier to make than maki sushi rolls! We’ll show you some simple techniques and tips so that you can make this delicious tuna sushi at home. Plus you’ll find how to cut raw tuna and customize this recipe by using cooked tuna, other seafood, or alternatives like vegetables. https://izzycooking.com/tuna-nigiri/ For those who are interested in learning more about this type of sushi and the tuna used, this page has a wealth of information. https://sushimodern.com/sushi/maguro-sushi-lean-tuna/ Wishing you all a wonderful day.
  12. Wishing you the best of times, Jacqui! We will all be following along to support you in this new adventure. I'm sure Jose will proudly be watching over you, rejoicing in your strength of spirit.
  13. I thought of Rays right after I posted that. I'm sure I could get something through Door Dash. They do have good food! As for Miss Camilla, can they get any cuter?
  14. A milestone! The kitchen is fully packed. From this point on, Panera is my kitchen and dining room. Maybe a subway now and then.
  15. I'm not a fan of rice. Of all the starches, rice is the one that spikes my blood sugar the most. I do love soups in the fall and winter, though.
  16. Sandi, I went with the moving van. Cost is about the same. With the pods you have to store things for 10 days minimum and I didn't need that much time. Turns out I will be able to move right in the day after I load up. Things are falling into place.
  17. Good morning, everyone! It is supposed to be cool and overcast today, but that's ok as long as it isn't raining. I went and got more small boxes yesterday as well as a new coffee pot. The old one developed a leak. I also made arrangements for pick up of some bulky items today and got those to the curb. Scavengers reduced the load a bit. All the utilities for both houses have been contacted and we will have lights and water in the new house when we move in. Today's agenda is more of the same. We are definitely in soup and stew season. Soup is wonderful on a blustery autumn or winter day. Today's soup is full of goodness. Arborio rice is a variety of short-grain rice used primarily in the classical preparation of risotto. Named after the area in Italy where it was originally cultivated, today the rice is also grown in the U.S. in states such as California and Texas. Arborio rice is short, fat, and slightly oval-shaped with a pearly white exterior. There are various size designations, of which super fino—the largest grain size—is the one most commonly used in the United States. Arborio rice is high in amylopectin, a starch present in rice. Because it undergoes less milling than ordinary long-grain rice, arborio retains more of its natural starch content. Cooking the rice releases this starch, resulting in a firmer, chewier, and creamier rice compared to other kinds of rice. Arborio rice is a little less than double the cost of regular long-grain white rice. https://www.thespruceeats.com/what-is-arborio-rice-995971 Our first recipe comes from Taste of Home and is full of good vegetables and protein. Rice and beans together make a complete protein, so no need to add meat to the dish. It is a little carb heavy for those watching the carbs. The good news is the beans really aren't all that bad because of the fiber content. https://www.tasteofhome.com/recipes/arborio-rice-and-white-bean-soup/ The next one uses different ingredients, but I'm sure it is equally tasty and satisfying. https://www.vegetariantimes.com/recipes/white-bean-and-arborio-rice-soup/ And this one has a tomato broth. https://dirtygourmet.com/2010/03/29/arborio-rice-and-white-bean-vegetable-soup/ Last, but not least, I want to wish Graham @grapau27 a very happy birthday! Enjoy dinner with your Sarah. Wishing you all a very good day.
  18. And they will be my adopted team. Sigh..... @Quartzsite Cruiser I'm sorry to hear about the bump in the road. Hopefully the fever will clear quickly and the transfer can take place. @smitty34877 Prayers that it is something minor and easily treatable. @Seasick Sailor That does seem like an obsessive amount of running around. Have you asked about consolidating some of that into one location?
  19. Good morning, everyone. My dad absolutely loved mincemeat. Every Thanksgiving and Christmas I made him a mincemeat pie, but not with just any mincemeat. It had to be Cross and Blackwell with Rum and Brandy in it. I also made hot brandy sauce to go over the pie along with some whipped cream. I miss doing that. Today is more packing. I need more smaller boxes so I'll have to go to the UHaul store to get some. I think I have a good handle on it. The kitchen is almost done. The back storage room is done. The bedrooms have the big stuff packed and I only have to empty the closets into the wardrobe boxes next week. Yesterday I made arrangements for all the utilities in the new home and today I'll call about shutting off the utilities in this house. Today's meal sounds yummy. Tacos are very versatile and you can stuff a tortilla with almost anything you want. You can make regular tacos and Greek tacos and today we have Thai tacos. Most of the recipes I found used chicken, but you could use turkey or even a mild white fish. If you are watching carbs, you can find low carb tortillas in the grocery store. I use them regularly. This first recipe uses chicken and has a nice peanut sauce. https://www.cookingclassy.com/thai-chicken-tacos-with-peanut-sauce/ While the first one used flour tortillas, Geoffrey Zakarian from The Food Network uses corn tortillas. I'm thinking they are interchangeable and if you prefer the flour ones, go for it. https://www.foodnetwork.com/recipes/geoffrey-zakarian/thai-style-tacos-8132835 This next recipe uses a pineapple cucumber slaw instead of the regular cabbage one. I think the pineapple slaw pairs well with the peanut sauce (my whole reason for liking these). https://carlsbadcravings.com/thai-chicken-tacos/ This next one goes way off in a different direction. Instead of chicken, it uses ground pork or beef and has a red curry sauce. Remember that curry doesn't have to be hot spicy. https://hot-thai-kitchen.com/thai-taco/ And here's one to satisfy the vegans/vegetarians in the family. https://www.jaroflemons.com/vegan-spicy-thai-tofu-tacos/ Wishing you all a wonderful day! Off to packing!
  20. The notary public they sent out wondered the same thing. She said they do it all the time and couldn't understand what the problem is now. Well, Sue has the wiring instructions and will take them to the bank tomorrow and ask them to wire the money then. All is well. It will work out. Wonderful on both fronts. Keep the good news flowing! I'm sure you are overjoyed.
  21. Closing on my Ohio home is this Friday, October 28th. Closing on the Michigan home is Monday, October 31. My sister has already closed on her house and has the money in hand. The title company refused to wire it to the title company handling the Midland home. I'm so glad you got some encouraging news. Having the feeling back in his legs is a big step forward. Let's pray that forward progress continues at a rapid pace. @Cruzin Terri Hooray for the good news about your hands and inflammation! That must make you breathe easier. What is wrong with the insurance company? I would have my nephew the lawyer write them a letter if it happened to me.
