It helps to be quick. A few months ago, I found an 18-day expedition cruise (I really wanted to do) on Silversea with 0% single supplement for $5,500. By the time I looked into: visa(s), air fare and hotels etc. and was ready to book i.e. 24 hrs. later, the base fare had risen and the 0% single supplement had disappeared - making it $15,000. ☹️ I didn't book.

Whether or not the pax's account is debited (and then credited) the crew appreciation charges seems to depend on whether or not they were included in a promo, or they are paid in advance separately.

Depending on a multitude of variables, there can be 20 different fares with different T&Cs for the same booking. More generally, how many people have actually read their cruise/passage contract? The contracts all basically state the line can do anything it wants and the passenger has no recourse.

In general, yes. However, on occasion they can be less - especially for solo travellers when the single supplement is 0-25% (and they go places the mainstream lines don't). You just have to monitor pricing. Sometimes, it 'all falls together' and for a few weeks my bathroom is clad in marble not fiberglass.

On a Chinese domestic airline (I forget which one) the economy class meal consisted of their version of Spam in a bun (which I think was made with rice flour, chalk and way too much sugar). They did have free beer though (warm). 🤣

You should have booked a cruise crossing the international dateline from west to east and argued your 13 days is actually 14 because one of them is 48 hours long.
