There are a number of sites that can provide that info but cruisedeckplans.com is the one I prefer. When you select the Carnival page, it will list all the ships currently in service and their stats (including each one's class).

If there is a simple list on the Carnival web site like the one the OP seeks, I cannot find it.

 

Each ship, individually, will have a description of it's class which, admittedly, can be a bit cumbersome.

 

On another note...your tag line is perfection for what sometimes goes on here!! :p
