Coconut Ranger Cookies

Possibly this has been posted before and I missed it but there is a URL with the recipe for these cookies from Royal.

 

I baked some and they aren't exact but close enough. I did alter the recipe by omitting the "praline paste" which I couldn't find anywhere and instead crushed up 1/2 cup of toffee bits. I also didn't use the coconut cream.

 

Until I am back on a ship these will be my substitute cookie.

Coconut cream is easy to use and available in grocery stores for a very reasonable price (at least, in North America) - about $2.00. Do not shake the can; the cream rises to the top and you can open the can and just scoop out what you need. Use the rest in a curry dish or similar. :)

There not as good as the old family recipe I have for Ranger Cookie's....While we do eat those when onboard (as hard and crunchy as they are)...we always think...gee...if only they were as good as ours ;):)

Those damn things are so addicting......

 

Yup, good reason for me to not even bother with trying to copy the recipe.

 

I can use that excuse to suggest to the DH that he can have more cookies, the

more I book cruises. :p :p
