When do you book for best deals

I think it really depends on where you are going and when. I watch prices all the time on many itineraries and ships, so I pretty much know when the price is right. I'm not as particular as some about the cabin I book, so I have more flexibility if I wait until after final payment,(which I do frequently.)

when do the best deals come up early or late or do you think there's not much difference

We almost always book on the day that the itineraries come out. Like others have mentioned, you can always rebook later if the price drops. For our upcoming Symphony cruise, the price jumped by 60% by the second day, so we were very fortunate to have booked on day one.
