What types of things can onboard credit be used for?

We have $100 onboard credit, and I'm wondering what it can be used for other than the obvious -- shopping.

That will depend on the cruise line involved, which you don't tell us. It's best to ask on the board for the cruise line involved.

 Check the cruise line in question  forum people there will let you know

I'm not sure how to find a forum for the cruise ship other than the Roll Call. We're sailing on the NCL Escape.
