How does 3 free specialty dining work?

Not sure exactly what the question is, but it’s exactly what it says.  You get three meals at specialty restaurants.  Do some research and figure out which you’d like to try.   Reservations open at (I believe) 120 days prior to sailing.  Make your reservations and enjoy!  (Note that additional slots open up on embarkation day.  If you don’t get your first choices of restaurants or times, they can be changed onboard.). Generally speaking, the free meal includes an app, a soup or salad, entree, sides and dessert.  Some restaurants are fixed price (Teppanyaki and Moderno).

Pretty much self explanatory.   You get to chose 3 dinners at any of the specialty restaurants.

If you pre-book and want to go to a fixed price restaurant, book that first so NCL doesn't try to charge you. 

Sample (pretty accurate) menus are available on the NCL site accessible from the ship deck plan pages (select Specialty Dining once you've clicked "What's on Board". 

if you miss out on your preferred days and/or times, a lot of slots are left for embarkation day; there will be a single site on board (usually a restaurant) where you can get in line and adjust / make reservations.  They're also available at lunch time on later days if you urgently need to adjust days / times.

Some items will have an upcharge, but they will be noted on the menu.  For example, lobster is usually a $25 upcharge.  Other than that, it doesn't matter the price

Correct.  There are a few things that have an up charge - like adding a lobster tail at Cagneys - but most options are included.

You can go to any specialty dining restaurant and order an appetizer, soup/salad, entree, and dessert. The actual terms and conditions are listed below along with an example meal. It actually includes cover charge restaurants (i.e., teppanyaki and Moderno), but you have to order their set meals. 

 

ARE ANY MENU ITEMS EXCLUDED FROM SPECIALTY DINING PACKAGES?

All Specialty Restaurant menu items are included except Seafood Platter in Raw Bar.

An SDP meal in a la carte restaurants includes 1 appetizer, 1 soup or salad, 1 main course and 1 dessert (does not apply to cover charge restaurants or Food Republic, Pincho Tapas Bar and Sushi, where a meal includes any 4 menu items). SDP does not include beverages and additional and/or premium menu items will incur charges.
