Are you going to Greece on your cruise?
Seems as though the emails that are being sent out are general emails, not specific to your exact itinerary.

You always should have a luggage tag on a checked bag in case it’s lost and one inside the bag too.
The airline rep or the kiosk prints out a baggage tag. If for some reason it gets torn off, then your own tag would have your address, email or phone to contact you.
You could just put your email and/or cell number on your luggage tag.

This is complicated and seems you would have to work through PCL UK, since it is their booking.
You really need an experienced UK rep to handle this. I’m not sure if they can add anyone if it’s sold out. You also need her account information to see what she has as far as FCC. I would ask for a rep in the customer solutions dept or a Lead in the UK to make sure you’re getting correct information.
Easiest workaround if the ship becomes available, book least expensive cabin using her points? (FCC?) and then once OB, letting GS know she’s in your cabin.
Possibly work with her CVP to make this happen.
You can fill out everything ahead of time for her on the App to make it easy.

So true. They always can work in a suite guest. They once told me they do not book up completely, just so they can accommodate a suite request. But, that was pre-covid.
