Dinner time on embarkment day

I would think anything after 5 will allow you to fully enjoy sail away. The safety drill is usually just before you pull away. On Allure last year the safety drill was done and before I could get from the theater to the top deck we were already moving.

why do they do that [muster drill 30 minutes before sailing]? then you gotta rush up top for sailaway.

Probably to make sure all passengers have boarded, since all passengers are supposed to take part in the muster drill. At least we don't have to take our life vests anymore to these drills.

If you like the welcome aboard show, keep in mind it is usually only one time, and slightly earlier than the usual late show (7 or 7:30). Might want to plan around being done dinner in time for that as well.
