Is the “Bionic Bar” a 24/7 operation or operating only during a schedule of hours?

I believe there is a crewmember that is required to be monitoring nearby.

They also do maintenance and replace the bottles. Usually a very tiny female.

At least on Symphony, Bionic Bar's hours were 11:00 AM to Midnight with occasional 15-20 minute breaks for cleaning and, as @John&LaLa mentions, maintenance and replacement of bottles.

Yes, it has set hours and when on Harmony it was shut down for periods of time due to not working correctly!  Along with what the above posters mentioned- maintenance and replacement of bottles.  There is always a crew member manning the bar during operating hours.
