Specialty Restaurant for Vegetarians

We are sailing on the July 9th sailing of the  Apex out of Athens.  July 10th is our 28th wedding anniversary and I was wanting to have a special dinner onboard.  My husband does eat fish and I do not.  Any suggestions for the best specialty restaurant that you think might be best for a special celebration but also accommodate our dietary needs?  Thank you in advance!!!!

I want to say Eden on Edge had a vegetarian version of its menu - it does a tasting menu

Eden would be a good choice.  Book ahead and talk to the MaitreD ahead so they can plan a great meal.

I see some have chosen to mock you. I can't speak for the Edge class ships. I have to think that if you talk to the Maitre'D that he will make it so for you. I think there will be plenty of vegetarians on your cruise so that won't be a problem for you. I think if you ask nicely and are willing to pay for a specialty experience Celebrity will be more than happy to make it so.
