According to Princess's own FAQs, "Unless noted, onboard currency is in U.S. dollars. However, on select Australian-based itineraries, the onboard currency is in Australian dollars."

 

According to a travel booking website with a UK URL, Princess uses USD even in Europe, as do most other international lines with a non-Eurocentric focus... However, it DOES note that P&O actually uses GBP, and MSC uses EUR for EU, and USD elsewhere.

If you happen to be on any of our UK (Southampton) cruises this summer, I would be glad to trade US dollars for pounds. 🙂  I have actually done that on Australia cruises and found that cutting out the middle man saves money.
