You should have seen this on the payment screen when you were checking out. You can go back and do a mock payment and it will show you on the payments screen. So add any excursion, go through the process following Pay Now, etc., and when you get to the last screen you will see how much OBC has been used and what remainder you'd have to pay on your credit card. Obviously, that is as far as you go unless you actually want the excursion. From the same page, you can choose to Remove the excursion, as in cancel the payment process and remove the excursion from your cart.

Yes. This is one of the things that OBC can be used for before boarding. It will be deducted from your OBC.

OTOH, specialty dining venues may not be booked using OBC before boarding.

There is no logic in this.

Yes you can, I just did so his morning and used over $1K in Princess gift cards for our cruise this fall.  Just make sure you get someone that knows how to apply them correctly in the system.
